Kippers

Imagine forests next to beaches next to mountains, and you're in the autonomous region of Catalunya (Catalan spelling). At the moment it is quite hot here - especially considering it's about 5C cooler in the mountains!
Kippers
Turn on the grill.
Put the kippers on a foiled baking tray
Halve tomatoes, put them on the kippers, and then season with pepper and salt.
Cook for five minutes, and serve with lemon and bread. We had poppyseeded pain de campagne.

Guacamole

Well my one at least.

I find avocado to be very spreadable when puréed, so its a healthy yet tasty alternative for butter. Often used in Mexican culture, guacamole is traditionally made by mashing avocado and mixing it with: pepper, salt, citrus juice, chopped tomato, sliced chilli and diced onion.

However my recipe is a little different, perhaps a slightly anglicised(?) one?

1 avocado
freshly cracked pepper
drizzle of olive oil
2 teaspoons of worcestershire sauce
handful of cherry tomatoes, halved

Mash the avocado into a smooth consistency with a few lumps.
Mix in the olive oil, and pepper.
Then mix in the worcestershire sauce.
Add the tomatoes, stir in, and voila!

Serve with crisped prosciutto or baked salmon.



 
Alternatively, you could,
replace the worcestershire sauce with some tequila
add lime juice
add chilli

Our Christmas Dinner

Iceberg lettuce with  celeriac remoulade, dressed grated carrot and apple*, radish and tomato
 

Red cabbage with balsamic and apple*

Wild boar and venison goulash with chestnuts*, onions and carrots

Freshly made spätzle

Chestnut jam, chestnut jam glazed mousse topped with crumbled toasted walnuts* and a morceau of orange and almond cake




*all items marked with an asterisk were foraged (mostly from Baden-Baden, Germany)
